It’s all about fruits!

Plain fruit is delicious as it is – but it tastes even better with the right cake base. There are just as many variations as there are fruits themselves – almost no limits to your imagination. Of course, the perfect fruit flan also depends on the dough. There are many different options, but four basic types of dough are the most common.

Shortcrust pastry is probably the best dough for the flan pan. It is usually prepared with cold butter, which makes the dough firmer and gives it a crispier texture after baking. Once the cake has cooled, its flat nature makes it perfect for garnishing with lots of fresh, sweet fruit. The classic cake batter is a delight even without the topping. This is the easiest dough to make and guarantees the best results –perfect for a great fruit flan when spontaneous visitors arrive. In contrast, the yeast dough takes the longest to prepare. The neutral dough is left to rise until it has almost doubled in volume, guaranteeing a delicious consistency after baking. In addition, the yeast dough is not as sweet as the other basic doughs, perfect for counteracting very sweet fruit and creating a delicious taste experience. The sponge dough completes the four basic types. The beaten egg whites create many air holes in the dough during baking, which ultimately bring about the fluffily consistency.

To turn the fruit flan into a cake, you need delicious toppings. Depending on the season, you can top your cake with apples, pears, gooseberries, apricots, wild berries and much more. The classic cake glaze is often used to set the fruit on the base. But purely vegetable alternatives are also becoming increasingly popular as a gelling agent. If you prefer something unusual, try a fruit flan with pudding, cream or curd cheese. This offers a sweet or fresh counterpart to the delicious fruit.
